Dear Investment Managers,

I should have seen it coming.

Slowly things starts to vanish… like the free Red Bull and Rock Star drinks. Then the disappearance of diet coke and other various snacks and sodas. Next a kind e-mail from your assistant to the entire office with the title “Lunch Policy”. It read that the office would no longer be providing lunch for its employees. When I looked in the office kitchen I noticed that even the Poland Spring order was light – the personal sized water bottles were replaced with the more economic jug.

Senior Manager Information Strategies

- Designed, managed and implemented a project to move out member email communications from our legacy application to a more dynamic a faster to market solution. SOX compliance, statistical reporting and an open interface to our affiliate companies were key factors in my design.

- Designed, managed and implemented a Commission Payment System to replace the previous process which was manually maintained in Excel files. Investigated the needs, located the data sources, internal and external, and designed a SOX compliant system that was web based and had interfaces to the existing data warehouse. A SOX compliant approval process of commission payment structures and payments was created in .Net and leveraged interface design with the CBR project.

- Designed, managed and implemented a module for CBR to take marketing campaign renewal data from the AS400 and automatically create renewal campaigns. This monthly process took the place of a manual process in Siebel requiring, 10-15 personnel. By managing the rules in CBR, Account Management personnel can now manage marketing campaigns with little to no manual intervention and provide full audit capabilities, thusly complying with SOX regulations.

- Designed, managed and implemented a Corporate Business Rules (CBR) add on to Siebel 7. CBR converted the rules in the Client Rules Database and used them to apply default field values and field validation on the fly to Siebel screens. This project allowed us to remove hard coded values in Siebel and put them into a database that did not require programming to update the business rules. A business process requiring VP approval for rules to be “live” was put into place. This nTier application was built in .Net, utilizing COM+, and web services, the application was so user friendly that the CFO stated: “All our applications should look like this!” This project reduced marketing campaign setup errors by 66%. CBR greatly re-enforced SOX compliance for Vertrue.

- Siebel 7 Implementation. Lead the Technical Analysis Team for the conversion from Siebel 5 to 7. Lead the Implementation Phase, arranged testing, bug fixing, training and roll out strategies.

- Implemented Test Track Pro and created an SOX compliant internal process for bug tracking.

- Designed, managed and implemented a web based Client Rules Database (CRD) that replaced all spreadsheets that were circulated by multiple departments to the Operations department. This project eliminated the translation errors of the Operations department when they compiled the information into their own format. I standardized the Input data and the output reports for each department, greatly reducing the translation errors. This system also helped the company remain SOX compliant.

- Hired to create and manage a staff of web developers to bring in house the 6 current web sites and build 4 more. Current development staff consisted of 4 programmers in the Omaha office and 2 in California, plus 3 outside agencies each managing one site. Original estimates were for 10-15 people to maintain the static html sites. I brought in 2 freelance programmers to take over the sites from outside agencies and hired one senior programmer to manage them and take over the one live and one in final development in Omaha, reducing our operating expenses to 1/4. Due to the high rate of change in the product web sites and the low money making opportunity of the sites I designed a system that would better facilitate the needs of the Marketing team. I hired 2 programmers and 2 freelance to construct the database driven system. Estimating one senior programmer and 2 programmers to maintain the system once developed, actual staff was reduced to one senior and one programmer when the system went live. The system uses Microsoft NT, SQL Server and compiled applications to produce html for the client and XML communications to the database. The system also communicates live to our AS400 data servers in Omaha for checking membership status and ordering benefits.

Personal Experience. 8/02-present

- After 2 years of hosting WinNT/2K & MS SQL Server web sites at home I decided to switch to Linux. For the Server I choose RedHat 7.3 and MySQL for its popularity and stability. I have since migrated to Fedora servers running Mambo web sites, due to the stronger code base.

- The Goal was to reduce custom coding time and host more sites. This was accomplished by choosing phpNuke as the site engine. Add on modules allowed me to leverage current site features (CtVwA.com) against out of the box features to give the users much more functionality with little to no maintenance time. After converting the first site I converted 3 others and have now created a total of 10 sites. I have since migrated to Fedora servers running Mambo web sites.

- Also needed was a personal email system. I chose the QVCS design. QMail (Mail Transport), Vmailmgr (Virtual Mail Manager), Courier (Imap Service), Squirrelmail (IMAP webmail system). This design gives both browser and mail client access to personal email. I added an application called SMLite, which required modifying a few bugs to work with the newer versions of php, I also returned the modified code the developer, This allowed Palm i705 and WAP access to the email server with minimal screens to reduce load times.

Playtex Products, Inc. 10/97-2/00

Senior Analyst Web Technologies

- Lead in the design and implementation of a project that gave access to a legacy AS/400 application via a browser. This project required updating our 56k connection to our web server to a T1 and installing and configuring new web/DNS and email servers as well as Cisco PIX firewalls in two locations. A host server
was added as an application to our Intranet to give AS400 “green screen” access to a legacy Order Inquiry application.

- Managed the maintenance of three brand web sites and one corporate site. Worked with HR, Communications and Marketing Directors to revive interest in the projects and budget money for future projects. Served on an e-Commerce Task Force lead by the VP of Sales as a technical liaison. This task force teamed with an outside consultant defined the direction that Playtex Products will take to get into e-Business and presented this information to the CEO and Board of Directors.

- Took over Corporate Dial-up Intranet project after users refused to use the system. Identified key errors and made necessary changes to create usable system within two weeks. Then took a next step towards proving the value of a web based Intranet by creating a secure section of the corporate web site and gave two sales divisions pages to post and download files. These changes increased user hits from 2-3 per day to over twenty out of 40 field users and significantly decreased the time to download files.

- Created a project plan and modified budget for the Intranet project to have a three person staff. Modifications included access from the Internet, easier file finding for downloading and uploading, a bulletin board system, email, HR forms and information, pre-built reports, access to the Data Warehouse for custom reporting, data replication servers for live reporting.

- Dresdner Bank, Wall Street, created a bar-coding system that ties to the Link Systems VRM via ODBC. The system allows the bank to track the location of computer assets and easily make updates when computers move. Reports for department equipment chargebacks/moves/inventory are available to the VRM users. The administrator has control over the MS Access database and can build custom queries to display in the VRM.

- AIG Trading, Wall Street, created a data conversion between CAP Spec (furniture specifying system) and the Link Systems VRM. Using Delphi 3 the program parses the flat file information into two tables and imports the data into Aperture via OLE, then merges the modified data back to the flat file.

- AIG Trading, Greenwich, created a circuit tracking database with Visual Basic 4 for the helpdesk to quickly find a circuit and check for existing problems and/or log new problems then archive the problem.

- Rockefeller Center/Tishman Speyer Properties NYC, used VB 4 to create a new interface to their archive/retrieval system of TIFF CAD drawings. This program builds dynamic SQL statements to query the 45,000 record database and a DLL is used to view the 5 GB worth of TIFF files. Created a project launcher in VB 4
connecting to Aperture via OLE, to simplify the opening and closing of the 15 projects using a map as the interface, also automating the synchronizing of data between projects.

- Crestar Bank, Richmond, created a Notebook in VB 4 for tracking leased property using Crystal Reports and Aperture via OLE to display floorplans. Modified the TSP project launcher in VB 4 to simplify the opening and closing of the 20+ projects in Aperture via OLE. Also created a wizard in Delphi 2, to automate the importing/exporting, printing and reporting across multiple drawings.

- GE Capitol, Danbury, created an Access database for Lease Management with Access reports.

- Used Delphi 3, VB 4 and Aperture via OLE to create simplified cad/database controls and automated procedures to the current Visual Resource Manager (VRM). Programs include multiple export/import sequence automation and conversion of CAP Spec information into the VRM.

Dear Sirs,
I wish to buy a narrow boat.  I wish to live on it, and to take it onto the canals and rivers of Europe.
I recently briefly inspected nb ‘Rosy’, and, at first glance, it seems as though she is a distinct possibility.  She appears to be a sound vessel, and although there are various alterations that I will have to make, they all seem to be possible.
In view of these necessary alterations, I will not be able to meet your asking price, but I would like to make an offer to buy her for �22,500 subject to the following conditions:
One:  That the boat has a current Boat Safety Certificate, and a declaration, signed by the owner detailing any structural work that has been done to the boat since the issue of the current Boat Safety Certificate.
Two:  That the current owner (who, I am led to believe, has owned her from new) walks me through the boat to discuss her construction, equipment and peculiarities.
Three:  That, following this walk through, the current owner (or a suitably experienced alternative) permits me to accompany them on a short (say 30 minutes) cruise to check:
* engine starting and stopping procedures
* the ability of the engine/prop to push the boat through the water and to stop her
* engine noise steering (both forwards and astern)
Four:  Following this walk through, me to entertain the current owner (and partner, if appropriate) for refreshments at a suitable, nearby hostelry.
Five:  That no major faults or inadequacies are discovered as the result of a survey (including an out of water survey) that will be conducted at my expense by a suitable experienced surveyor.  (To this end, I attach at Annexe A a list of my immediate concerns, and the alterations that I would wish to make.  I believe that these alterations are all possible, but I will seek the surveyor’s opinion regarding them, and the impact that they may have upon the safety of the boat).
Six:  Me to be provided with as much documentation as is available to the current owner concerning the operation of the various equipment and systems on board.
Seven:  Me to be provided with suitable documentation showing that I am the sole owner of the vessel, and that all necessary Value Added Tax has been paid.
Eight:  Suitable arrangements can be made for the vessel to remain in your marina (me to pay the mooring fees which I am led to believe will be in the region of �20 per week) until such time as I can move her (expected to be within three or four weeks of the date of purchase).
Naturally, I am willing to deposit funds (I suggest �100) with a suitable person, as a token of my good faith.
I will pay the balance of the purchase price by cash/bankers draft/bank transfer/cheque (as you wish) as soon as the above conditions have been attended to.

ANNEXE A to letter dated 4 Sept 1999
As I wish to take the vessel onto the canals and rivers of Europe, where passing traffic can produce big bow waves and wash, I am concerned about the water integrity of the vessel.
My three immediate concerns are:
1. The front well deck appears not to be fitted with over the side drainage to evacuate water shipped into the well deck.  I would wish to cut such drainage holes, and need assurance from the surveyor that such holes are compatible with the regulations covering the Boat Safety Scheme, or that other suitable drainage arrangements can be made, and the likely cost of these arrangements.  I also need to know about the drainage holes on the well deck that seem to drain into the bilges.
2. There appears to be a problem with the weed hatch which currently seems to be held in place by some G-clamps and mole wrenches.
3. Access to the water tank for cleaning etc.
The structural alterations I would need to make (at my expense, of course – see Condition 5 in my letter) are:
1. Welding over the low-down ventilators and windows on the forward bulk-head, and installing replacement, high-level vents (or roof vents) ducted down low to compensate for the ventilators welded over.
2. Installing steel doors in the forward bulkhead.
3. Installing a second side hatch and slide in the engine ‘ole opposite the current one.
4. Installing a hatch on the stern deck for easy access to the weed hatch.
5. Provision of (diesel powered?) central heating, and increasing the diesel storage capacity (believed to be currently 25 to 30 gallons).
6. Up-rating the electrical system to providing (for example) a source of mains electricity for powering some mains appliances.
(In the end, I changed the well deck into a tug front deck and decided (on the grounds of cost) not to put in the second side hatch .  The survey showed up that the fuel capacity was about 80 gallons (400 litres, which is just about sufficient).

Curing Your Barrel

First rinse the inside of the barrel by filling and emptying 2 or 3 times to remove any wood debris. Prior to use, your barrel must be filled with water or submerged for approximately 3 to 5 days. This will allow the oak to expand and retain liquid. (the barrel will leak until cured) After this initial curing period, place the barrel on the holder in a dry area. Liquid will continue to slowly drain through the wood for the following 3 to 7 days. Keep the barrel filled during this time. When the barrel stops draining, empty the contents and rinse again. You are now ready to fill with your spirits.
Filling with Spirits

When filling your barrel with spirits, fill the barrel completely removing all air. Place the cork in tightly. Air inside the barrel will spoil the aging process.

Aging Tequila

When aging tequila, fill the barrel with clear (non colored) tequila. Over time, the tequila will absorb the color of the oak becoming a golden brown. Age to taste, generally between 6 months to 2 years. After aging for 6 months begin tasting the tequila every few weeks. Once aged to taste, empty the tequila into a glass bottle and seal tightly. This will stop the aging process. You can now begin aging a new barrel. Barrels left without liquid will dry out quickly. See �Maintaining Your Barrel� below.

Storage

Barrels should be stored in a cool place and away from sunlight. This will protect both the exterior of the barrel and the aging spirits inside. In time liquid will be absorbed by the barrel or evaporate, generally about 5% over 2 years. Dry climates or heated homes tend to cause more evaporation.

Maintaining your barrel

Over time the exterior of your barrel will show wear. Lightly sand your barrel with a fine sandpaper. Wipe off any debris with a clean cloth, and paint a coat of varnish on the outside of the barrel.

Barrels left without liquid will dry quickly and no longer hold liquid without leaking. If this occurs, begin the curing process again.

Aging tequila, wine or brandy can be a fun and entertaining hobby and makes for great conversation at parties. It�s inexpensive to begin and once you have aged your first barrel full you will never buy another bottle of premium tequila or brandy again. (Personally, I still enjoy good wine) As a side note for tequila lovers� I don�t find any benefit to using my aged tequila in margaritas. With all the sugar I don�t taste the difference and I do enjoy a festive margarita. It may be my taste buds!

A quick overview of Port wine

True Port wine comes only from the Douro Valley in Portugal, in the same way
that true Champagne only is produced in the district of the same name located
some 90 miles east of Paris. And like Champagne, other wines around the world
are produced in a similar style to Port, but they are not Port and — while
these pretenders may be quite aromatic and flavorful — they fail to capture
the delicate balance between complexity and elegance, power and finesse of
true Port wines.

Port divides quickly into two different kinds of wine: Vintage Ports and wood
Ports (see Appendix A).
Vintage Ports, which account for only two percent of
all Port wine made, are wines which age briefly in wood and then spend years
maturing patiently in the bottle. Indeed, by law, Vintage Ports must be
bottled “between 1 July of the second year following the harvest and 30 June
of the third year, counting from the year of the harvest.” In simpler (and
more practical) terms, Vintage Port must be bottled two years after the
vintage. Wood Ports are defined as everything which is not a Vintage Port.
They spend several years aging in the bottle and, by and large, are ready to
drink once they reach the marketplace. Wood Ports include such recognizable
wines as Ruby, Tawny and White Ports, but also such wines are Vintage
Character Ports, LBVs and “Crusted Ports,” as well as the often-misunderstood
Colheita Ports.

Vintage Port must say “Vintage Port” (“Vintage Porto”) on the label in big
print, on the same line with nothing coming between the two words. This is
necessary to distinguish a Vintage Port from the two other types of (Wood)
Ports which carry a vintage date on the label (i.e.: LBVs and Colheitas — see
below). In general, Vintage Ports are medium-to-full bodied, with a power and
richness not found in other forms of Port. While the traditional “rule of
thumb” is that Vintage Ports need to be a minimum of 10-15 years of age (from
the vintage date) prior to serving, this has never stopped restaurants in
America from serving young vintage Ports before their prime. Vintage Ports can
age for a considerable time — three to four decades is not an uncommon length
of time to age Vintage Ports in one’s cellar.

Most Vintage Ports are produced from a number of different vineyards, one
chosen for backbone, one for style, one for bouquet, another for finesse, etc.
As with Champagne, the key was in the blending of these various components to
create a synergistic whole, better than the sum of its parts. Classically, the
one exception to this is Quinta do Noval, which produced its Vintage Port from
a single vineyard, or quinta. Recently, several Port producers (more commonly
known as a “house” or “lodge”) have begun making single-quinta Vintage Ports.
These are generally produced from their best vineyard, but not in their best
years. In contrast to the perceptions of most wine drinkers, who (often
correctly) believe that a Cabernet from a single vineyard (e.g.: Martha’s) is
better than the “regular” Cabernet, single-quinta Vintage Ports — while often
excellent — are rarely as good as the “mainstream” Vintage Port from that
house. Again, the exception is Quinta do Noval, which only makes a single-
quinta Vintage Port, and other small producers which also make their Ports
solely from single vineyards (e.g.: Quinta do Crasto, Quinta do Infantado,
Quinta de la Rosa).

The major houses began this move toward single-quinta bottlings of Vintage
Port to keep up with the increase in the world-wide demand for Vintage Port
without increasing the production of Vintage Port, per se. In other words, the
majors know their single quintas produce a very good Port, but since it is not
the same (nor as good, in classic terms) as their “true” Vintage Port, they do
not dilute the world demand (or price) for their Vintage Ports by adding these
single quintas to their portfolio. [Note: a list of major houses and their
common single-quintas appears as Appendix B.] Other Port
lodges make a Vintage Port in lesser years under a second label. [See
Appendix C.]

The difference between a Vintage Port from one producer and another is merely
the difference in “house style,” in the same way that the style of a Brut
Champagne varies from one house and another. That, and the specific character
of each individual vintage. Like a vintage Champagne, Port houses do not
declare a vintage every year but only in the best vintages. Certain years are
regarded as producing wines which are more “feminine” in style, such as 1975
or 1983, while other years may be viewed as more “masculine” (1977, 1982).
Each producer has a characteristic style that remains consistent throughout
the entire range — from Ruby through Tawny, all the way to Vintage.

White Ports come into two varieties, dry and sweet. The dry type is
relatively new in the overall history of Port and is increasingly popular in
Portugal before dinner as an aperitif, in the vein of Lillet or Dubonnet,
though it is often compared (incorrectly) to a dry sherry. The sweet type is
more traditional and, while it has lost some of its popularity in its native
land, it remains a favorite in France and Sweden. Although both types can
“hang in there” after bottling, bottle age does not result in any improvement.
Indeed, the dry type is frequently hurt by bottle age as the wine loses
whatever freshness it had to start with and begins to oxidize. This explains
their overall lack of popularity in the U.S. (and the comparison with sherry),
which reinforces their sitting around, which reinforces their perception of
being oxidized, which reinforces, etc., etc., etc.

Ruby Ports are generally the youngest Port wines offered in a producer’s
portfolio. With lush fruit and noticeable sweetness, these are sometimes
served lightly chilled as a summer aperitif, or mixed with lemon, it is a
popular drink in English pubs. Also, it can be enjoyed with desserts such as
fresh pears poached in Port wine and similarly fruity-sweet dishes. While
bottle aging does not improve these wines to any noticeable degree (they are
ready-to-drink once bottled), there is no need to drink them quickly. They are
very stable and last reasonably well after opening.

Tawny Ports are older, lighter in both body and color, and noticeably drier
than Rubies. Indeed, the name “Tawny” comes from their mahogany-like hue (just
as “Ruby” stems from the bright ruby-garnet color of these young wines). They
are usually produced by combining various older Port wines together in a
system of fractional blending. This process is different from a Sherry solera,
but the two share the idea of mixing the young wine with older wines. There
are several kinds of Tawny Ports. The two major kinds include those with no
specific statement of age (e.g.: your basic n.v. Tawny Port, a premium
bottling of an older Tawny); and, older Ports with a specific statement of
age. The only age statements legally permitted are: 10-, 20-, 30- and 40-Year
Old Tawny Ports. The older the Tawny, the more pale the color, the more
elegant the bouquet, the more delicate the flavor, the drier the style and the
more expensive the bottle. Tawny Ports, like Rubies, do not improve with added
bottle age and are very stable once opened. Older Tawnies, because of their
increased delicacy, are slightly less stable after opening, but only slightly
– it is rarely anything to worry about from a restaurant/back bar/home use
standpoint.

By the way, a “young” Tawny Port is something of a contradiction in terms, as
the name is derived from the color the wine acquires with extended cask aging.
Young Tawnies do exist, however, as some Tawny Ports are produced by blending
Ruby and White Ports together, thereby achieving the appropriate color. The
reason behind this is that, by its very nature, Tawnies are more expensive to
produce, given the cost involved in long-term wood aging and in tying up the
necessary inventory of stocks in the cellar. Blending Ruby and White Ports
together is a cost-effective way of creating a Tawny- style, although it will
lack the delicacy of aroma and complexity of taste a true Tawny will achieve.

Tawnies with specific statements of age are still blends. The age statement
refers to the average age of the wines in the blend. Thus, a 20-Year Old Tawny
Port that was bottled in 1994 will contain wines older than 20 years of age,
but will also have some wines younger than 20 years of age.

Another kind of Tawny is the vintage-dated Colheita Port. These are Tawny
Ports from a single vintage, for example 1963, but these are not Vintage
Ports. Indeed, the use of the word “Vintage” on the label is strictly
forbidden in order to avoid any confusion with Vintage Port. Instead of being
bottled after two years in wood, as is the case with a true Vintage Port, or
bottled between four-and six years as with a Late Bottled Vintage Port (see
below), these Tawnies age for extended periods of time in cask. They cannot be
bottled before a minimum of seven years of aging in wood, thereby assuring the
wine takes on a Tawny quality. A 1963 Colheita Port might be bottled in 1982,
1992 or 1995 — whenever the winemaker decides the wine is ready. A Colheita
Port will always bear two dates: the year of harvest and the year of bottling.
[This type of Port was once known as "Port of the Vintage" but the confusion
between Port of the Vintage and Vintage Port was too great. "Port of the
Vintage" is now a forbidden term, but may occasionally turn up on wines
bottled prior to 1974 or so.] Also, as some firms feel the word “Colheita” is
difficult for non-speakers of Portuguese to pronounce, they have gotten
permission to use a new term: “Single Harvest Reserve.” To date, Dow and Warre
employ this newer terminology.

Tawny Ports are often served after dinner, either alone or with more delicate
desserts that nonetheless are quite flavorful. Shaved chocolate and fresh
raspberries, a mocha brownie, cheeses like an aged Gouda or Morbier and blues
lighter than Stilton. Dried apricots and other fruits accompanied by walnuts,
filberts and unsalted almonds are also quite good.

The final category of wood Ports are those styled to resemble a true Vintage
Port. Remember that Vintage Port represents only two percent of all Port wine
produced, yet that is the category Americans most treasure. In yet another
attempt to satisfy the increased demand for Vintage Port, producers have
increased the production of Late-Bottled Vintage and Vintage Character Ports.
Late- Bottled Vintage (LBV) Port is a wine produced from a single vintage, and
is made like a true Vintage Port in every way save one: instead of being
bottled two years after harvest, LBVs are bottled after a minimum of four
years and a maximum of six years of aging in cask. Both the vintage date and
the bottling date must appear on the label. Also, LBVs must say “Late-Bottled
Vintage” clearly on the label to avoid any confusion with a true Vintage Port.
Unlike Colheita Ports, these wines retain the full-bodied ripeness and flavors
of a true Vintage Port, as opposed to being a Tawny Port from a single year.
Unlike Vintage Port, these wines are drinkable when they reach the market and
not in need of extensive bottle aging. Unlike other forms of Wood Port, LBVs
will improve with moderate bottle aging. Since they are produced in the style
of a Vintage Port, in that they possess the character, flavor and depth of a
true Vintage Port, they have the “stuffing” for additional bottle age , but
since they are somewhat less complex and generally less tannic in their youth
(owing in part to their extra aging in cask), this additional age is not a
requirement, as it would be with a true Vintage Port.

The aging potential of Late Bottled Vintage Ports can actually vary
considerably, depending upon the style of the house and the goals the
winemaker(s) has in mind. Those LBVs with the word “Traditional” or
“Tradition” appearing on the label have been neither fined nor filtered, and
are capable of aging gracefully for several, if not many, years. Wines with no
such designation on their label may also age, but it is a bit more of a risk
– one does not know if they have been fined and/or filtered to strip out
harsh, youthful tannins. This would achieve the goal of early drinkability and
enjoyment, but rob the wine of the strength and structure necessary for
longevity.

(Mention should be made here of the now-rarely seen “Crusting Port.” This
once very popular style is markedly similar in all respects to a Late Bottled
Vintage, save for one — it combines two or three wines from vintages which
are three to four years of age and, after marrying in cask, bottles the
result. Crusting Port is forbidden by law from carrying any reference to a
particular vintage and, although capable of improving in the bottle, has
largely been replaced by the LBV bottlings, although it is still found in
Great Britain. It will improve with some aging, say 5 years or so, and will
throw sediment.)

Vintage Character Port is a non-vintage blend of relatively young wines, made
in a style to give the consumer the depth and character of a Vintage Port, but
without the expense of both money and time. They are smooth, rich and round,
with no hard tannins at all in evidence. These wines are ready-to-drink once
bottled and generally do not improve with further bottle age, though some
aging is not a detriment. They will usually keep better after opening and so
often fit the needs of the home where Port is only an occasional after-dinner
drink. (For a list of common Vintage Character Port brands, see Appendix D.)

Vintage Character, LBVs and young Vintage Ports are classically served with
Stilton and freshly shelled walnuts, although other blues such as Maytag Blue
work quite well. Their more forceful presence also lend themselves to richer
chocolate and/or fruit courses than described above, or with coffee/espresso.
The older the Vintage Port, the more complex the flavors. Personal preference:
I prefer to enjoy older Vintage Port alone — at least for the first glass –
and then perhaps a second with a good cigar.
