Homemade Powerbar Recipe

I got this one from Alton Brown…

Dry Ingredients:
4 oz Soy Protein Powder
2.25 oz Oat Bran Powder
2.75 oz Whole Wheat Flour
0.75 oz Wheat Germ
1/2 tsp Salt

Wet Ingredients:
12.3 oz Soft Silken Tofu
4oz Dark Brown Sugar
2 lg eggs
1/2 cup unfiltered Apple juice
2/3 cup Natural Peanut Butter (substitute Almond or Cashew)

Fruit:
3oz each Chopped Raisins & Dried Blueberries (substitute Craisins, banana…)
2.5 oz each Chopped Dried Cherries & Dried Apricots (substitute Dried figs)

Set Oven to 350 degrees. Mix Dry ingredients in one bowl. Mix Wet ingredients in another bowl. Pour Wet ingredients into Dry and mix well. Mix in fruit. Line a 9×13″ baking pan with oiled parchment paper. Spread dough in pan (oil hands if needed). Cook until 205 degrees in middle, approx 35 min. Cool then overturn to remove. Cut with pizza cutter. Keep one week in fridge, or freeze. Makes 16 servings.
